Ghetto Carbonara

Funny how lack of resources can lead to some delish dishes.

Ghetto Carbonara – Serves 2 (hungry) people

About 1/2 a pack of spaghetti (although any pasta will do)
4 rashers of bacon
2 eggs
Milk or cream
Clove of garlic
Crushed chilli, salt & pepper
Knob of butter
Olive oil

Boil water, add salt & pasta.

Beat egg with dash of milk or cream, season to taste.

Fry or grill bacon til just done, then chop roughly. Finely chop garlic and add to knob of butter in pan with sprinkling of crushed chillis. Add bacon and fry til golden & crispy.

Drain pasta when done (about 8 minutes), and put back in pan (off heat), stirring in egg mix, bacon bits etc. Serve immediately with parmesan on top.
